Aluminum pans are sold as 11¾ x 9¼ x 2½

A deeper pan – 3 or 3½ – would be better but 4 is too deep

A slightly smaller pan – about 8 x 10 – would be better but I can’t seem to find those

A square pan of similar area won’t work as well unless I cut the brisket slices in half
