Corn Bread

Ingredients

4 cups   all-purpose flour
2 cups   yellow corn meal
2 Tblsp   sugar
1 tsp   salt
2 Tblsp   baking powder
4   eggs
3 cups   milk
Tblsp   vegetable oil
½ cup   butter, melted

Procedure

  1. Preheat the oven to 350F.

  2. Oil a 2" x 8" x 12" baking pan.

  3. In a large bowl, sift together the dry ingredients.

  4. In a another bowl, mix all of the wet ingredients except the butter.

  5. Pour the wet mixture over the dry mixture.

  6. Add the melted butter and stir well.

  7. Pour into the pan and bake about 1 hour or until a knife comes out clean.

Notes

This makes a lot of corn bread, even a half recipe is enough for four people; just cut all measurements in half, and use a 2" x 8" x 8" pan.

The original recipe called for 1½ cups of sugar, but that was much too sweet!
