Mild Barbecue Rub

Good for any kind of barbecue.

Makes

5/8 cups

Ingredients

3 T   cumin
2 T   kosher salt
2 T   white sugar
2 T   light brown sugar
1 t   chili powder
1 t   black pepper
1 t   sweet paprika

Procedure

  1. Grind the black pepper.

  2. Combine everything, mixing well.

Notes

For a slightly different taste, use dark brown sugar.

For chicken thighs, 1T is enough to lightly coat the back (it’s silly to put rub on the skin if you’re going to throw it away); medium covering of both sides of a thigh takes 4T.
