Good for any kind of barbecue.
Almost 3/4 cups
3 T cumin 2 T kosher salt 2 T white sugar 2 T light brown sugar 1 T sweet paprika 1 1/2 t black pepper 1 t chili powder
For a slightly different taste, use dark brown sugar.
This one has a bit more zing than my other barbecue rub recipe but I don't consider this “fiery” it’s simply too spicy for my wife.
For chicken thighs, 1T is enough to lightly coat the back (it’s silly to put rub on the skin if you’re going to throw it away); medium covering of both sides of a thigh takes 4T.
